Ingredients

1 cup Jordan Farms Black Rice

1 ½ cups water

1 cup coconut milk

½ cup coconut sugar

Coconut sugar syrup
1 cup coconut sugar

1 cup coconut cream or whipping cream

Procedure

Cook rice in water in a covered pot.

Boil coconut milk and sugar. Add the cooked rice and stir together until it is thoroughly blended . Cook down until thick .

Shape into logs using banana leaf.

Coconut syrup
Boil together coconut sugar and cream until it thickens into caramel consistency.

Cool down and use as sauce.

Tapol Rice Pudding

Ingredients

1 cup Jordan Farms Tapol

2 cups water

2 cups coconut cream

½ cup white sugar

For the Garnish
1 cup coconut sugar

½ cup water

Fresh mangoes

Procedure

Wash and rain rice twice. In a saucepan add water and soak for 30 minutes to 1 hour .

Cook the rice until tender.

In a separate saucepan , simmer coconut cream and sugar until sugar is dissolved .

Add the cooked rice and stir . Continue cooking in low fire until mixture is creamy and the coconut cream is well absorbed. Don’t let it dry up as it will further set when cool .

Make the garnish : Boil water and coconut sugar until it turns into syrup.
